Easy Tacos al Pastor

I had to make these tacos twice in the last week because I thought they were so good.  That, and I had to confirm the first time was not a fluke.  The first run at this happened on a Friday night with more than a few beers, so I had to make sure the wife and I were not dreaming when we thought they were friggin awesome!  I love tacos al pastor, but here in Des Moines you cannot get those right down the street.  You have to find a sketchy neighborhood with a taco truck or pay up for the ‘fancy’ authentic mexican joints downtown.  So, I was thrilled when this impromptu experiment turned out for this Easy Tacos al Pastor recipe.  You will love the contrasting spiciness of the pork with the fruity citrus of the pineapple.  It is a must try.

The basic rundown is this….

Slice up and pound out strips of pork tenderloin (not pork loin… there is a difference)

Season the heck out of the pork with Hot Lov’n Rub and marinate in olive oil and pineapple juice for an hour

Chargrill on high heat for 3-4 minutes a side

Heat up tortillas with olive oil over the grill or on a pan

Top with sour cream, sliced tomatoes, pineapple, and cilantro (onion & avocado if you like)

Easy Tacos al Pastor

Ingredients

  • 1-1.5 lb Pork Tenderloin
  • 1 8 oz Can of Pinnapple "Chunks" or "Tid Bits" in unsweetened natural juice
  • 2.5 Tablespoons Hot Lov'n BBQ Rub
  • 2 Tablespoons Olive Oil
  • 10 Tortillas flour or corn
  • 1 Bunch of Cilantro
  • Sour Cream
  • Cherry Tomatoes

Instructions

  1. Slice up the pork tenderloin into 4 pieces, and pound out the strips of pork tenderloin, flattening the pork tenderloin into pieces about 1/2 - 3/4" thick
  2. Season the heck out of the pork on each side with Hot Lov'n Rub
  3. Place pork in a casserole dish and drizzle olive oil over the pork. Mix together to coat the pork with the olive oil.
  4. Add 1/2 can of pineapple juice to pork as a marinade. Mix together. Marinate for 1 hour in fridge.
  5. Prepare taco toppings - quarter the tomatoes and chop up the cilantro. Set the sour cream out to soften while grilling
  6. Grill pork over very high heat (over 500 F) for 3-4 minutes a side. Longer to char the pork if needed.  Take off the grill when the internal temperature is 145 F. 

  7. Rub a small amount of olive oil on each side of tortillas and place on grill for approximately 20 sec a side depending on grill temperature

  8. Assemble tacos and enjoy!

Add more or less cayenne depending on spice tolerance
